I love french onion but every time I try to make it the soup is just too sweet. That doesn't deter me I keep trying it but I always have the same issue. This one was too sweet too.
I caramelized about 4 cups of onions to a rich brown and then added garlic and cook that for a few minutes. then chicken broth and a little white wine, season with salt and pepper and let it cook for 40 minutes I then toast baguette with some Swiss or Gruyere cheese and I browned some cheese on the soup too. Finally I float the baguette on the soup and serve. Not very good, maybe I have to use beef stock.

There is a recipe in The New Best Recipe that I was reading and it sounds really good. If I try it, I'll have to let you know!
Hmmm. What type of onions are you using? I like to use regular yellow onions. I use beef stock only if it's homemade since the store bought versions taste funny to me.

Holybasil - I am using regular yellow onions. Store beef stock taste funny to me too; however, I have never made my own.
Too fun, I made french onion soup on Sunday. I use red wine to deglaze my pan before I put in the chicken stock. I am not sure if that would help your sweetness or not. Do you use butter to cook you onions? Do you add any sugar at all?

You are a genius! I haven't had French onion soup in such a long time. Maybe I'll make some tomorrow.
Did you put booze in it? Maybe that made it too sweet. Don't you put port or some other liquor in French onion soup?
Maybe you could add some acid, to cut the sweetness.
My French Onion soup recipe - from a real live French chef uses only white wine...and 1 - 2 tbs beef paste/powder. No water, no chicken stock... It's to die for...
And not too sweet.
He also doesn't caramelize the onions, just sautes until tender.
Maybe you're putting too much work into what should be a fast and simple peasant soup?

I make a french onion soup that I love, I use beef broth, garlic, sal and pepper and provolone cheese.
hullo!!!! I just made french onion soup over the weekend! I found that using red onions makes it much sweeter than brown ones...I also used beef stock in mine.
