Pan Roasted Potatoes

6-8 medium potatoes, scrubbed and quartered

3-4 T. olive oil

Salt

Pepper

toss the potatoes with oil, salt and pepper and place in a cast iron pan. cook over medium heat turning each once to brown and crisp on both cut sides and cooked through. Add more oil if needed.
