I was supposed to make pot roast this week but the weather got warm and I wanted to eat something green so I had pea soup. This batch of pea soup was one of the best ever, all thanks to a really good smoky ham that I got at Costco.

Pepradelle with braised pork, asparagus and bread crumbs
I had some left over braised pork in the freezer that I needed to use so I thought that it would be nice with some Pappardelle, outside of that I had no idea what I was going to make.
Tonight was the night to figure out what to do so I look in the refrigerator and see a whole lot of asparagus that I bought (my kids love the stuff) so I thought ok lets do it and when I was done this is what I had...
I first put a large pot of salted water on to boil for the Pappardelle. I then took some bread that I had and put it in my blender and ground it to crumbs, laid the crumbs out on a baking pan and broiled until lightly browned and a little crunchy, then pull the pork apart with a fork and added it to a frying pan with some olive oil over low the med low heat. I cleaned and cut my asparagus to size and blanched it in the water for the Pappardelle for 2 minutes and pulled it out and put it into an ice bath and set it aside. Next add the pasta to the water and cook according to package directions. Once the pasta is cooked pull it out of the water and put it in the pan with the pork, add in the asparagus and some pasta water to help make a sauce. Remove the pan from the heat, add in some olive oil, salt and pepper to teast, the toasted bread crumbs and serve with fresh parmesan cheese.
I will make this again; however, it was a little dry so I will make more of a sauce with more olive oil, garlic and some wine.

I found this recipe at http://thebarmybaker.blogspot.com/2007/03/you-are-my-sunshine-my-only-sunshine.html and thought it looked good. My 3 year old daughter and I made it last weekend and it was wonderful and I am now making to as my "bring" for easter.

5 egg yolks
1/2 cup sugar
2 large lemons, juice and finely minced rind
1/4 cup unsalted butter
In a heavy saucepan, combine yolks and sugar over low heat. Add lemon juice and rind. Stir, adding butter a little bit at a time. Cook until thick, stirring constantly. Strain into a bowl or other container, press plastic wrap over the surface and chill until set
Basic Sponge Sheet
4 eggs, separated
pinch of salt
1/4 cup sugar
1/2 tsp vanilla (I also added 1 Tbsp finely minced lemon rind)
1/4 cup cornstarch
1/4 cup sifted all purpose flour`\
Heat oven to 400f. Grease an 11x16" jelly roll pan and line with parchement paper, lightly grease the parchement.
Beat egg whites with the salt until they hold soft peaks. Gradually beat in sugar, sprinkling it in a tablespoon at a time. Continue to beat until the whites are very firm, about 5 min.
-stir yolks with a fork to break them up, add vanilla. Fold 1/4 of the egg whites into the yolks thoroughly to lighten the mixture.
Pour the egg yolk mixture on top of the remaining egg whites, sprinkle the cornstarch and flour over the mixture and fold all together gently by hand. Fold until no bits of egg white show, be careful not to overmix.
-Pour into prepared pan, spread evenly. Bake 10 minutes or until very lightly browned (try not to overbake). Loosen sides of cake immediately and turn cake out onto a towel liberally sprinkled with powdered sugar. The cake should be flexible
Spread the cake with a thin layer of raspberry jam, leaving about one inch at the bottom of it lengthwise (or if you want a thicker cake roll leave the one inch at the bottom of it widthwise). Spread a thin layer of lemon curd over the raspberry jam and roll the cake up, cover and refrigerate for about 2 hours or overnight.
Dust the top with powdered sugar, and enjoy!
